Super Simple Mini Vanilla Cupcakes!


Ingredients:

1 cup cake flour

1/2 cup castor sugar

1 tsp baking powder

1/2 tsp salt

1/2 cup milk

1/4 cup oil

1 egg

1 tsp vanilla essence

Method:

Sift dry ingredients together.

Add wet ingredients and mix until smooth and creamy - yum!

Place paper cups on tray and fill each cup 1/2 full.

Bake @ 180* for about 15 mins.

We chose to eat them plain, but if you'd like some icing - try this easy method:

Cream together 125g margarine + 125g icing sugar.

Add 2 tablespoons of milk and mix well (Add cocoa or food colouring as desired.)
